This is the second edition of the our Newsletter, "Summer with Pastene." We’ve had good feedback about the 1st newsletter and videos posted on “YouTube”. Comments on the videos ranged from "Good Job" to "too long." People that want to see more requested "How To" videos. Here are a couple titles we’ve come up with: “How to make polenta” and “Meatballs 101” . In our “New Products” section we’ll introduce two new products and a surprise! Team Pastene has been working hard to update our label look. More about both of these in separate articles. We’ve included a recipe that will appear on the back of one of our new boxes. That's right you'll soon be able to purchase our pasta in boxes.

Italian food has always been about family and friends getting together. Summer is the perfect example. Cook outs in the back yard or on the beach with family and friends. Pasta salads, antipasto, hot dogs, burgers and sandwiches made with the best ingredients from Pastene.

It’s interesting how many people have stories about Pastene products. If you have a story about Pastene products or a story about your family meals, especially your family meals around the holidays, send it in. Maybe we'll include your story in our holiday issues. We want to encourage home cooking and family get togethers.

Recipe: Pasta Salad with
Pastene Ginger or Chili Spiced Tuna

Chili TunaSummer is a great time for cold pasta salad around the pool, at the beach or on a picnic. Why not add a new twist with some new flavors from Pastene. In the last Newsletter we introduced our new “Spiced Tunas”. Many, who made orders through our online store, received free samples of our “Spiced Tuna” (we have promotions like this from time to time) and then participated in our online poll. The results, our “Chili Tuna” was most popular by itself, but the “Ginger Tuna” made great salads and casseroles.

Here is a Summer update of one of our Pasta Salad recipes.


  • 1lb. Pastene Tricolor Fusilli
  • 1 Can Pastene Chickpeas, drained.
  • 1 Can Pastene Pitted Olives, drained.
  • 1 Can Pastene Tuna with fresh ginger or Tuna with chili
  • 2 Celery stalks, chopped
  • ½ red onion, chopped
  • 1 cucumber, chopped
  • 4 tbsp. Pastene Wine Vinegar (or to taste)
  • 2/3 cup Pastene Extra Virgin Olive Oil
  • 4 tbsp Pastene Hot Finger Peppers sliced (optional)
  • Salt and Pepper


    1.) Cook pasta in boiling salted water for 10 minutes, or until al dente. Drain and place in a large bowl.

    2.) Drain the can goods. Add all remaining ingredients and mix well. Season to taste with salt and pepper, and serve immediately or chill and serve. Garnish with Pastene Pitted Olives, if desired.

    • For a zesty kick add Pastene “Vinegar Peppers”, “Pepper Rings” or “Sweet Sliced Red Peppers”. Dice into small pieces and add them with the other ingredients.



  • 1 tbsp. Pastene 100% pure olive oil
  • 1 sm. onion, chopped
  • 2 lg. garlic cloves, finely chopped
  • 2 tbsp. Pastene Non- Pareille capers
  • 1 (28 oz.) Pastene Italian Peeled Tomatoes chopped
  • 1 Pastene anchovy fillet, chopped
  • 2 lbs. fish fillets
  • Salt and pepper to taste
  • 1/2 c. dry white wine


    Cover fillets with mixed ingredients. Bake at 350 degrees for 20 to 25 minutes or until fish flakes. Feeds about 4.

    Pastene Potato Gnocchi in our Tomato Basil pasta sauce. Yet another quick gnocchi recipe.

    Elegant and Quick, Gnocchi:

    Gnocchi (pronounced nee--Ok-kee) are easy enough to make from scratch. The recipe for this elegant little pasta is on our web site, but when you read it you may just want to buy our Potato Gnocchi and save yourself some time.

    Gnocchi are a very versatile pasta. Mostly made from potato they can be dressed with many sauces. Gnocchi will do very well in your favorite meat sauce. We like to make a quick pesto sauce using our Pesto Basil Sauce and Pignoli nuts (recipe found on our web site, or use our Sun-Dried Tomato sauce recipe on the back of the Pastene Gnocchi package.

    Below is a suggested summer recipe:


    • 1lb. Pastene Imported Potato Gnocchi
    • 1 cup diced zucchini
    • 1/2 cup chopped sweet yellow pepper
    • 2 teasponns Pastene Extra Virgin Olive Oil
    • 1/4 cup Pastene Imported Pesto Basil Sauce
    • 1 cup Pastene Imported Italian San Marzano tomaotoes, chopped
    • 2 oz. Pastene Pignoli Pine Nuts, toasted

    1.) Cook the gnocchi according to the directions on the package
    2.) In a large skillet saute the zucchini and yellow pepper in the oil until crisp-tender.
    3.) Drain the gnocchi; add to the skillet with the pesto. Gently stir until coated.
    4.) Stir in the Pastene San Marzano tomatoes.
    5.) Sprinkle with the Pignoli pine nuts, to taste.

    And that's a couple of summer recipes from Pastene. Have a safe and fun summer.
