Chipotle peppers are key to many Mexican dishes. Ours are made by placing jalapeño peppers on an open smoke pit for up to two weeks, drying and concentrating their heat. They are packed in an adobo sauce, traditionally made with chili powder, vinegar, sugar, garlic and herbs.
