    Scallop and Roasted Pepper Kebabs


    12 Kebabs
    12 smallBamboo skewers
    2 tbspPastene Extra Virgin Olive Oil
    9Pastene marinated mushroom caps, quartered
    1/2 lbsea scallops
    1 jar (7oz)Pastene Roasted Peppers, cubed
    1/2 cupPastene Italian Flavored Bread Crumbs
    1 1/2 tbsplemon juice


    • Soak skewers in water for 10 minutes. Preheat the oven to broil. 
    • Heat olive oil in a skillet over medium heat and cook mushrooms for about 4 minutes.
    • Thread scallops, mushrooms, and peppers cubes on skewers. Brush with lemon juice and olive oil, sprinkle with bread crumbs.
    • Place on a broiler pan and place at 2 inches from the hot broiler element. Broil for about 4 minutes, turn after 2 minutes. Serve with lemon wedges.
