|2 tbsp||Pastene Extra Virgin Olive Oil|
|9||Pastene marinated mushroom caps, quartered|
|1/2 lb||sea scallops|
|1 jar (7oz)||Pastene Roasted Peppers, cubed|
|1/2 cup||Pastene Italian Flavored Bread Crumbs|
|1 1/2 tbsp||lemon juice|
- Soak skewers in water for 10 minutes. Preheat the oven to broil.
- Heat olive oil in a skillet over medium heat and cook mushrooms for about 4 minutes.
- Thread scallops, mushrooms, and peppers cubes on skewers. Brush with lemon juice and olive oil, sprinkle with bread crumbs.
- Place on a broiler pan and place at 2 inches from the hot broiler element. Broil for about 4 minutes, turn after 2 minutes. Serve with lemon wedges.
