Garden Tuna Salad Sandwich

Lemon Parsley Vinaigrette
2 tspminced shallot
1 tbspminced fresh parsley
1/4 cuplemon juice
1 tsplemon zest
1/2 cupPastene Extra Virgin Olive oil
3/4 tspsalt
Garden Tuna Salad Sandwich
15ozPastene tonno
1/2chopped fennel
1/2green apple
1 cupmayonnaise
2 tbspLemon Parsley vinaigrette (see above)
1 tspground coriander
1/2 tspsea salt
6hot dog rolls
6boston lettuce leaves


  • Combine Pastene oil, lemon zest and juice, parsley, shallot and salt in an 8 oz jar. Shake firmly until mixed.
  • Combine cans of Pastene tonno, chopped fennel, apple, mayonnaise, vinaigrette, fennel seeds, coriander, and salt and toss together well.
  •  Line each hotdog roll with lettuce leave.
  • Spoon ½ cup tuna salad onto each roll
  • Serve immediately
