Garden Tuna Salad Sandwich


Serves 6
Lemon Parsley Vinaigrette
2 tspminced shallot
1 tbspminced fresh parsley
1/4 cuplemon juice
1 tsplemon zest
1/2 cupPastene Extra Virgin Olive Oil
3/4 tspsalt
Garden Tuna Salad Sandwich
15 ozPastene Tonno
1/2chopped fennel
1egg, lightly beaten
1/2¼ cup Pastene Extra Virgin Olive Oil
2 tbspLemon Parsley vinaigrette (see above)
1 tspground coriander
1/2 tspsea salt
12 piecesof white or wheat bread


  • Combine Pastene oil, lemon zest, and juice, parsley, shallot, and salt in an 8 oz jar. Shake firmly until mixed.
  • Vigorously whisk olive oil and egg together then combine cans of Pastene tonno, chopped fennel, vinaigrette, parsley, fennel seeds, coriander, and salt and toss together well.
  • Spoon ½ cup tuna salad onto each sandwich. 
  • Serve immediately
