Garden Tuna Salad Sandwich


Serves 6
Garden Tuna Salad Sandwich:
3 (5 oz) cansPastene Tonno (tuna)
½ cupPastene Extra Virgin Olive Oil
½fennel bulb, chopped
1egg, lightly beaten
1 tspground coriander
12 pieceswhite or wheat bread, toasted
Lemon Parsley Vinaigrette:
1 Tbspfresh parsley, chopped
½shallot, minced
¼ cuplemon juice
1 tsplemon zest
½ tspsalt
½ tsppepper
½fennel bulb, chopped
1egg, lightly beaten


  • Vigorously whisk olive oil and egg together then combine tuna, fennel, coriander, dressing with salt and pepper; mix well.
  • Dressing: Combine olive oil, lemon zest, and juice, parsley, shallot, and salt in tightly-lidded glass jar. Shake firmly until mixed.
  • Toast bread and spoon ½ cup of the tuna salad onto each sandwich, serve immediately.
