|1||28 oz can Pastene Kitchen Ready Tomatoes|
|5 Tbsp||Pastene Tomato Paste|
|1 Tbsp||Pastene Minced Garlic|
|2 cups||gluten free vegetable stock|
|⅓ cup||red onion, diced|
|½ tsp||black pepper|
|fresh basil, for garnish|
Prep time: 5-10 minutes | Cook time: 30 minutes
- Mix all ingredients in a large saucepan and bring to a boil. Turn heat to low and simmer, covered, for 30 minutes. Season with salt and pepper.
- Remove from heat and let cool. Puree in batches in a blender.
- Return to pan and simmer another 5 minutes before serving.
- Serve in a shallow bowl and garnish with basil.
