Pastene Queso

Ingredients

Serves 4
1 10 oz can Pastene Diced Tomatoes with Green Chilies, drained
2 Tbsp butter
1 Tbsp flour
1½ cups milk
3 cups cheddar cheese, coarsely grated
cilantro to taste

Directions

Prep time: 5 minutes | Cook time: 5-10 minutes

  • In a medium pot on medium-low heat, melt the butter.

  • Once the butter is melted, add the flour and mix well. Slowly add the milk, stirring constantly.

  • Heat until just before boiling, then slowly add the cheese, stirring constantly.

  • Cook for 5 minutes. Add the tomatoes with chilies and heat until the tomatoes are hot.

  • Garnish with cilantro and enjoy with tortilla chips!
