1 | 28 ounce can Pastene San Marzano DOP Tomatoes | |
1 | medium white onion, chopped | |
3 Tbsp | butter | |
1 ½ cup | water or chicken stock, your choice | |
1 tsp | salt | |
croutons | ||
fresh basil for garnish |
Directions
- In a large saucepan, melt butter on medium heat.
- Add onions, stock, tomatoes with juices, and salt.
- Simmer and cook, untouched, for 30 to 40 minutes.
- Puree the soup with an a blender.
- Serve with fresh basil and croutons, if desired.
