|1 ½ lbs||shrimp, cooked and deveined|
|1 cup||red onion, halved and thinly sliced|
|2 cups||lemon juice|
|½ cup||lime juice|
|1||can Pastene Diced Tomatoes with Green Chilies, undrained|
|¼ cup||cilantro, chopped|
|8||Pastene Jalapeño Sliced Peppers, optional|
|salt and pepper to taste|
|2||ripe avocados, diced|
Prep time: 30 minutes to 2 hours
- Place shrimp and onion into a large glass bowl. Pour lemon and lime juice over shrimp until floating. Stir to combine.
- Cover and let marinade for at least 30 minutes and up to two hours. Stir halfway through.
- When shrimp is done marinating, drain into a colander. Place shrimp and onions into a separate bowl and add tomatoes, cilantro and jalapeño peppers into the same bowl. Stir and add salt and pepper to taste. Right before serving, mix in diced avocado.
