Easy Ceviche


Serves 5-6
1 ½ lbs shrimp, cooked and deveined
1 cup red onion, halved and thinly sliced
2 cups lemon juice
½ cup lime juice
1 can Pastene Diced Tomatoes with Green Chilies, undrained
¼ cup cilantro, chopped
8 Pastene Jalapeño Sliced Peppers, optional
salt and pepper to taste
2 ripe avocados, diced


Prep time: 30 minutes to 2 hours

  • Place shrimp and onion into a large glass bowl. Pour lemon and lime juice over shrimp until floating. Stir to combine.
  • Cover and let marinade for at least 30 minutes and up to two hours. Stir halfway through. 
  • When shrimp is done marinating, drain into a colander. Place shrimp and onions into a separate bowl and add tomatoes, cilantro and jalapeño peppers into the same bowl. Stir and add salt and pepper to taste. Right before serving, mix in diced avocado.
