Ingredients
Serves 5-6
1 ½ lbs | shrimp, cooked and deveined | |
1 cup | red onion, halved and thinly sliced | |
2 cups | lemon juice | |
½ cup | lime juice | |
1 | can Pastene Diced Tomatoes with Green Chilies, undrained | |
¼ cup | cilantro, chopped | |
8 | Pastene Jalapeño Sliced Peppers, optional | |
salt and pepper to taste | ||
2 | ripe avocados, diced |
Directions
Prep time: 30 minutes to 2 hours
- Place shrimp and onion into a large glass bowl. Pour lemon and lime juice over shrimp until floating. Stir to combine.
- Cover and let marinade for at least 30 minutes and up to two hours. Stir halfway through.
- When shrimp is done marinating, drain into a colander. Place shrimp and onions into a separate bowl and add tomatoes, cilantro and jalapeño peppers into the same bowl. Stir and add salt and pepper to taste. Right before serving, mix in diced avocado.
