Ingredients
3-4 cups | seedless watermelon, cubed | |
2 cups | ripe tomatoes, cut into bite size pieces | |
1 | cucumber, peeled,seeded, sliced and quartered | |
1 | small red onion, sliced | |
⅓ cup | Pastene Pitted Kalamata Olives, halved | |
⅓ cup | crumbled feta | |
chopped fresh mint | ||
Pastene Extra Virgin Olive Oil, for drizzling | ||
Pastene Red Wine Vinegar, for drizzling | ||
salt and pepper to taste |
Directions
- In a large bowl combine watermelon, tomatoes, cucumber, red onion, olives, feta and mint.
- Drizzle with olive oil and vinegar, sprinkle with salt and pepper, toss and serve.
